- Preheat the oven to 140˚C / 120˚C fan / Gas 1.
- Cut away the inner ribs of the kale leaves and tear into similar size pieces.
- In a large bowl, toss the leaves with the oil, paprika and sugar and spread out over two baking trays.
- Bake for 15 minutes, then turn the leaves and bake for a further 10-15 minutes until crisp. Do not let the leaves brown too much as they will become bitter.
