- Preheat the oven to 180˚C / 160˚C fan / Gas 4 and line a baking sheet with parchment.
- Place the bread on the paper in a single layer and bake for 10-15 minutes, turning half way through. The bread should be crisp but not browned.
- Remove from the oven, put into a food processor or blender, and blend to form fine breadcrumbs.
- Store in an airtight container or freeze.
Spiced nuts – place the breadcrumbs in a bowl and add 75g of demerara sugar, 3 teaspoons of cinnamon and 150g of toasted nuts. Mix well and use to top ice cream or cooked fruit.
Lemon and herb – place the breadcrumbs in a bowl and add the zest of 1 lemon and 2 tablespoons of chopped fresh parsley. Mix well and use to coat fish fillets, chicken breasts or as a base for a stuffing.
