- Place all the ingredients, except the cheese, in a food processor or liquidiser and blend for a few seconds until the mixture comes together and is smooth, then add the cheese and blend again.
- Taste for seasoning, then spoon into a small jar and cover with an extra spoonful of oil.
- Use within a week or store in the freezer.

- Leafy tops from 6 carrots, roughly chopped
- 20g basil leaves
- 2 garlic cloves
- 60ml olive oil
- 15g nuts e.g. pine nuts, walnuts, hazelnuts, toasted and chopped
- 50g parmesan or strong mature cheddar, grated
