- Preheat the oven to 200˚C / 180˚C fan / Gas 6 and line a baking tray with parchment.
- Toss the potato peelings with the oil and sprinkle with the sea salt. Pour onto the baking sheet and spread out into one layer.
- Bake for around 15 minutes until crisp.
