Carrot top pesto


  • Leafy tops from 6 carrots, roughly chopped
  • 20g basil leaves
  • 2 garlic cloves
  • 60ml olive oil
  • 15g nuts e.g. pine nuts, walnuts, hazelnuts, toasted and chopped
  • 50g parmesan or strong mature cheddar, grated

Makes 1 small jar


  1. Place all the ingredients, except the cheese, in a food processor or liquidiser and blend for a few seconds until the mixture comes together and is smooth, then add the cheese and blend again.
  2. Taste for seasoning, then spoon into a small jar and cover with an extra spoonful of oil.
  3. Use within a week or store in the freezer.
