- Preheat the oven to 100˚C / 80˚C fan / Gas ¼, or as low as it goes.
- Wash and dry the orange peel well.
- With a paring knife, cut the peel into thin pieces, making sure you remove as much of the white pith as possible.
- Line a baking sheet with parchment and spread the peel in one single layer on the sheet.
- Bake for 2-3 hours until the peel is dry and brittle. Leave to cool and grind in a coffee grinder or spice mill and store in an airtight container.
- Use to flavour cakes, biscuits or puddings.
